Description

Ingredients

½ teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

½ teaspoon cinnamon

½ cup melted butter

¾ cup packed dark brown sugar

1 large egg

1 large egg yolk

2 teaspoons vanilla extract

1½ cups old-fashioned rolled oats

¾ cup raisins

¼ cup semi-sweet chocolate chips


Instructions

  1. Preheat your oven to 350°F (177°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In a larger bowl, whisk the melted butter, brown sugar, egg, egg yolk, and vanilla until smooth.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Fold in the oats, raisins, and chocolate chips.
  6. Chill the dough for 20 minutes if you have time.
  7. Scoop dough onto baking sheets, spacing each cookie about 2 inches apart.
  8. Bake for 10 to 12 minutes, until the edges are golden but centers are still soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Use rolled oats, not quick oats, for the best chewy texture.

Chilling the dough makes the cookies thicker and richer in flavor.

Store cookies with a slice of bread to keep them soft longer.
