Ingredients
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
½ cup melted butter
¾ cup packed dark brown sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
1½ cups old-fashioned rolled oats
¾ cup raisins
¼ cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (177°C). Line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- In a larger bowl, whisk the melted butter, brown sugar, egg, egg yolk, and vanilla until smooth.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Fold in the oats, raisins, and chocolate chips.
- Chill the dough for 20 minutes if you have time.
- Scoop dough onto baking sheets, spacing each cookie about 2 inches apart.
- Bake for 10 to 12 minutes, until the edges are golden but centers are still soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Use rolled oats, not quick oats, for the best chewy texture.
Chilling the dough makes the cookies thicker and richer in flavor.
Store cookies with a slice of bread to keep them soft longer.
