Description
Soft, buttery biscuits made from pancake mix! Quick, easy, and perfect for breakfast or brunch.
Ingredients
Scale
- 2 cups pancake mix (preferably buttermilk)
- 3/4 cup cold milk (or buttermilk for richer flavor)
- 6 tablespoons cold butter (grated or cubed)
- Extra pancake mix or flour (for dusting)
Instructions
- Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
- Mix pancake mix and cold, grated butter in a large bowl. Blend with a pastry cutter until crumbly.
- Add cold milk gradually, stirring gently until the dough forms. Stop when it’s soft but not sticky.
- Shape dough on a floured surface. Fold it over itself four times to create layers. Roll to 1-inch thickness.
- Cut biscuits with a round cutter. Place them on the baking sheet, touching slightly for a higher rise.
- Bake for 10-12 minutes or until golden brown.
- Brush with melted butter if desired. Serve warm.
Notes
- Use buttermilk for a tangier, softer biscuit.
- For savory variations, add cheddar and chives.
- For sweet options, add a sprinkle of cinnamon sugar before baking.
- Freeze unbaked biscuits and bake from frozen, adding 2 minutes to the cooking time.
