Pancake Mix Biscuits – Easy, Fluffy, and Quick

  • Total Time: 20 minutes
  • Yield: 8 biscuits 1x

Description

Soft, buttery biscuits made from pancake mix! Quick, easy, and perfect for breakfast or brunch.

Ingredients

Scale
  • 2 cups pancake mix (preferably buttermilk)
  • 3/4 cup cold milk (or buttermilk for richer flavor)
  • 6 tablespoons cold butter (grated or cubed)
  • Extra pancake mix or flour (for dusting)

Instructions

  • Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
  • Mix pancake mix and cold, grated butter in a large bowl. Blend with a pastry cutter until crumbly.
  • Add cold milk gradually, stirring gently until the dough forms. Stop when it’s soft but not sticky.
  • Shape dough on a floured surface. Fold it over itself four times to create layers. Roll to 1-inch thickness.
  • Cut biscuits with a round cutter. Place them on the baking sheet, touching slightly for a higher rise.
  • Bake for 10-12 minutes or until golden brown.
  • Brush with melted butter if desired. Serve warm.

Notes

  • Use buttermilk for a tangier, softer biscuit.
  • For savory variations, add cheddar and chives.
  • For sweet options, add a sprinkle of cinnamon sugar before baking.
  • Freeze unbaked biscuits and bake from frozen, adding 2 minutes to the cooking time.
