Description
A delightful mix of crispy Rice Krispies and gooey chocolate chips, these cookies have the perfect balance of crunch and chew. Quick, easy, and irresistible for any occasion!
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2 cups semi-sweet chocolate chips
- 3 ½ cups Rice Krispies cereal
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
- Fold in chocolate chips and then gently mix in Rice Krispies to avoid crushing them.
- Scoop dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
- Bake for 9-11 minutes, until the edges are golden brown. The centers may look slightly soft but will set as they cool.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra crunch, roll the cookie dough balls in additional Rice Krispies before baking.
- Customize by adding nuts, white chocolate, or a sprinkle of sea salt for a flavor twist.
- Store in an airtight container for up to 5 days, or freeze baked cookies for up to 3 months.
