For the Sushi Rice:

  • 2 cups sushi rice
  • 2 ½ cups water
  • ¼ cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

For the Fillings:

  • 250g sashimi-grade salmon (or smoked salmon)
  • 1 small avocado, sliced
  • 1 small cucumber, thinly sliced
  • 1 small carrot, shredded
  • ½ cup edamame, shelled

For the Toppings:

  • 1 sheet nori, cut into strips
  • 1 tablespoon sesame seeds
  • 1 tablespoon furikake seasoning
  • 2 tablespoons spicy mayo (optional)

Instructions

  • Prepare the Sushi Rice: Rinse the rice under cold water until the water runs clear. Let it soak for 30 minutes, then cook according to package instructions. Once cooked, mix in the rice vinegar, sugar, and salt. Let cool.
  • Prepare the Fillings: Slice the fish, avocado, and cucumber. Shred the carrot and set all ingredients aside.
  • Assemble the Sushi Cake: Lightly grease a springform pan or line it with nori. Press half of the sushi rice into the bottom. Add a layer of fillings, then cover with the remaining rice.
  • Chill and Set: Cover with plastic wrap and refrigerate for at least 15 minutes. This helps the layers hold together.
  • Unmold and Decorate: Remove from the pan and place on a serving plate. Top with sesame seeds, furikake, and spicy mayo. Slice and serve with soy sauce, wasabi, and pickled ginger.

Notes

  • For a vegetarian version, replace the fish with marinated tofu or mushrooms.
  • If using raw fish, ensure it is sashimi-grade and consume it the same day.
  • Store leftovers in an airtight container in the fridge for up to 24 hours.
