For the Sushi Roll:
- 2 cups sushi rice, cooked and seasoned with rice vinegar
- 4 sheets nori (seaweed)
- 6 oz imitation crab, shredded (or real crab meat)
- 1 small cucumber, cut into thin strips
- 1 avocado, sliced
- 2 tbsp sesame seeds
- 2 tbsp tobiko (fish roe)
For the Lava Topping:
- ½ cup cooked shrimp, chopped
- ¼ cup imitation crab, shredded
- 2 tbsp spicy mayo (mayonnaise + sriracha)
- 1 tbsp eel sauce
- 1 tsp masago (optional)
For Garnishing:
- Extra spicy mayo and eel sauce
- Green onions, finely chopped
- Tempura flakes (optional)
Instructions
- Prepare the Rice: Rinse and cook sushi rice according to package instructions. Mix with rice vinegar, sugar, and salt, then let it cool.
- Prepare the Fillings: Cut the cucumber and avocado into thin slices. Shred the imitation crab.
- Roll the Sushi:
- Place a nori sheet on a bamboo sushi mat.
- Spread a thin layer of rice over the nori, leaving a small space at the top.
- Add cucumber, avocado, and crab meat near the bottom edge.
- Roll tightly using the sushi mat, pressing gently to seal.
- Make the Lava Topping: In a bowl, mix cooked shrimp, shredded crab, spicy mayo, eel sauce, and masago.
- Add the Topping: Slice the sushi roll and place pieces on a plate. Spoon the seafood mixture on top of each piece.
- Broil or Torch: Broil in the oven for 2-3 minutes or use a kitchen torch to lightly char the topping.
- Garnish and Serve: Drizzle with eel sauce and spicy mayo. Sprinkle with sesame seeds, green onions, and tempura flakes. Serve immediately.
Notes
- Adjust spice level by adding more or less sriracha.
- Real crab can be used for a richer flavor.
- For an extra crunch, add tempura flakes to the topping.
